Sizzler Plates & Sizzling Platters
A sizzler is the dish that advertises itself. The moment it leaves the kitchen, the hiss and the cloud of steam turn every head in the room, and the guests at the next table start reading the menu again. That is how one sizzler can sell the next one, but only if the plate is hot enough, big enough and safe enough to carry through a busy floor.
Makrey has supplied restaurants and hotels across India since 1981. This collection has 21 sizzler plates, each with an MS (mild steel) tawa on a wooden base, in round, oval, square, oblong, triangle, bean, fish and continental shapes, from a 3.25" brownie sizzler to an 11.5" steak plate.
Wooden Sizzler Plate with MS Tawa
Every wooden sizzler plate in this range has two parts: a mild steel tawa that is heated in the kitchen, and a wooden base that keeps the heat away from the table and lets the server carry it. As a sizzler plate with wooden base, it can go straight from the flame to the guest without a separate underliner.
Oval Sizzler Plate
The oval sizzler plate is the classic shape for Indian and continental sizzlers. The normal oval has a 9.5" x 5.75" tawa, and it comes in four styles: plain, with a handle, with a cavity in the base, and a rectangle base with three dips in a burnt wood finish. The oval XL has a larger 11" x 7.5" tawa.
Round and Square Sizzlers
- Round flat: 6" and 8" tawas, and a 10" flat sizzler with a 10.25" tawa.
- Round deep: a 6.5" tawa with a single handle or with collar handles, for saucy sizzlers.
- Round grill: a 9" tawa, 1.75" deep.
- Round with two dips: a 6" tawa with two dips on the base.
- Square: 8" with a 7" tawa, and 10" with an 8" tawa.
Shaped Sizzler Trays
For a different look, choose a sizzler tray, with the tawa size in brackets, in a fish shape, a triangle (8"), a bean or kidney shape (8.5" x 4.5"), an oblong (10.25" x 6.5"), a Euro sizzler with a dip (9.75" x 6.75"), or a double-S sizzler (10.5" x 8"). The rectangle sizzler with three dips has a 10.5" square tawa, so the sauces sit beside the sizzling food.
Sizzler Plate Big Size for Steaks and Platters
For steak sizzler plates and full-meal sizzlers, size matters: the steak, the vegetables, the rice or mash and the sauce all need room on the tawa. The two largest are:
- Continental large: an 11.5" x 6.75" rectangle tawa, for steaks, chops and continental mixed grills.
- Oval XL: an 11" x 7.5" oval tawa, for chicken sizzlers, paneer sizzlers and sharing portions.
The double-S (10.5" x 8") and the 10" round flat also suit large portions.
Brownie Sizzler Plate
The brownie sizzler plate comes with a 3.25", 5" or 6" round tawa on a wooden base. The 3.25" suits a single brownie with a scoop of ice cream, and the 5" and 6" suit a larger dessert or a brownie to share. Pour the hot chocolate sauce at the table, so the sizzle happens in front of the guest. For a sizzler brownie plate on a dessert menu, pair it with our dessert cups for the other sweets.
How to Use a Sizzling Platter for Restaurant Serving
- Heat the MS tawa on its own, on a flame or hot plate, until very hot. Never put the wooden base on the flame.
- Place the hot tawa on the wooden base with tongs, then add a layer of cabbage leaves or onion slices so the food does not stick.
- Add the food, then pour butter, sauce or water at the table for the sizzle and steam.
- Warn the guest that the tawa is very hot, and keep the handle side towards the server.
For sauces on the side, see our dip bowls, and for kebabs and live counters, our snack warmers.
Caring for Sizzler Plates
Let the MS tawa cool fully before washing. Wash it, dry it straight away, and wipe a thin layer of oil over it before storing, as mild steel can rust if left wet. Wipe the wooden base with a damp cloth, do not soak it, and keep it away from the flame. For cast iron pans, see our cast iron pans.
